Summer Squash Crab Cakes

Here is a great recipe for turning your summer squash into mock crabcakes. Anyone who grows squash knows that on a good year ya can be over run by squash and need new exciting ways to cook it, well here is one I love and it's cheap and easy too.

Ingredients
2 cups of summer squash
2 Tbsp mayonnaise
2 Tbsp onion
2 eggs
1 1/2 cups of fine bread crumbs or cracker crumbs
1 1/2 Tbsp Old Bay Seasoning

Start by cutting the skin off of the squash. You may skip this and use the skins if it is new fresh tender baby squash otherwise if the squash has a tougher skin the cakes will not stay together as well. Chop the squash into small inch chunks Cook the squash in boiling water until they are soft usually about 15 minutes. Drain the squash and mash them up. In a large mixing bowl add the squash with the other ingredients. This is one of those jobs better done by hand then by machine. Next take the mixture and make it into patties and fry in a nice hot pan that has a little oil in it. You can adjust the amount of Old Bay Seasoning to your own liking.
This is a fun recipe to add to your menu. I have also rolled the mixture into small balls and then you can deep fry them and they make a great side dish or snack.
